Ethiopia

A floral, fruity coffee with a refined and pronounced sweet character.

In espresso, blueberry, white grape, and plum come together with floral notes. Lime and green tea give the coffee a fresh character.

As a cappuccino, it is soft and refined, with creamy floral notes and white grape. Plum and blueberry provide a light fruity sweetness.

In an americano, the coffee is fresh and bright. Blueberry and white grape are at the forefront, complemented by plum and lime. Green tea provides a clean finish.

The pronounced sweetness carries the profile. Distinct bitters are slightly more prominent than the fresh acidity, with green tea aligning with the bitters and lime providing freshness. The body provides structure and a pleasant mouthfeel. Floral and fruity layers make this a complex, refined coffee.

Water temperature: 95°C
Bring water to a boil (100°C) and let it cool for 30 seconds.

Grind size: Medium coarse
Coffee: 15 grams
Water: 250 ml
Total brew time: ± 3:25 minutes

Brewing instructions

Preparation
Rinse the paper filter with hot water to remove any paper taste and to preheat the dripper.

0:00 – 0:30- Bloom
Pour up to 70 grams of water.

Agitate for 5 seconds.

0:45 – 1:00
Slowly pour up to 150 grams.

1:45 – 2:00
Continue pouring up to 200 grams.

2:15 – 2:30
Continue pouring up to 250 grams.

Total brew time: ± 3:25 minutes

Espresso

Water temperature: 96°C
Grind size: Fine (powdery)
Coffee: 18 grams
Extraction: 45 ml
Total extraction time: ± 29 seconds

Brewing instructions

Preparation
Grind 18 grams of coffee finely
Distribute evenly in the portafilter and tamp firmly and level.

Extraction
Start the extraction immediately.
Aim for 40 ml of espresso in approximately 26 seconds.

French Press

Water temperature: 95°C
Bring water to a boil (100°C) and let it cool for 30 seconds.

Grind size: Coarse  
Coffee: 30 grams
Water: 500 ml
Total brewing time: 8:00 minutes

Brewing instructions

Step 1– Preparation
Place the French Press on a scale and tare.
Add 30 grams of coarsely ground coffee. 

Step 2– Brewing
Pour water until it reaches 500 grams.
Stir briefly so that all the coffee is saturated.

Step 3– Extraction
Let steep for 8 minutes. 

Step 4– Serving
Slowly press the plunger down and serve immediately.
