Nicaragua

A juicy, distinctly sweet coffee with a layered, fruity character.

As an espresso, this coffee is juicy and aromatic, with notes of red grape, blackcurrant, and cassis. Cherry, stone fruit, and the sweetness of molasses give the profile depth.

As a cappuccino, it is full-bodied and silky smooth. Red grape and blackcurrant lead the way, while cassis and molasses deepen the creamy character.

In an americano, the coffee comes across as fresh and fruity, with cherry, red grape, and blackcurrant. Lemon-like acidity provides vibrancy, followed by a sweet finish of molasses.

In the profile, sweetness takes center stage. The distinct bitterness is slightly stronger than the fresh acidity, while the body provides structure. The interplay of fruit and molasses makes this coffee complex and layered, with a juicy character.

Water temperature: 95°C
Bring water to a boil (100°C) and let it cool for 30 seconds.

Grind size: Medium coarse
Coffee: 15 grams
Water: 250 ml
Total brew time: ± 3:25 minutes

Brewing instructions

Preparation
Rinse the paper filter with hot water to remove any paper taste and to preheat the dripper.

0:00 – 0:30- Bloom
Pour up to 70 grams of water.

Agitate for 5 seconds.

0:45 – 1:00
Pour gently up to 150 grams.

1:45 – 2:00
Continue pouring up to 200 grams.

2:15 – 2:30
Continue pouring up to 250 grams.

Total brew time: ± 2:40 minutes

Espresso

Water temperature: 96°C
Grind size: Fine (powdery)
Coffee: 18 grams
Extraction: 45 ml
Total extraction time: ± 26 seconds

Brewing instructions

Preparation
Grind 18 grams of coffee finely
Distribute evenly in the portafilter and tamp firmly and level.

Extraction
Start the extraction immediately.
Aim for 45 ml of espresso in approximately 26 seconds.

French Press

Water temperature: 95°C
Bring water to a boil (100°C) and let it cool for 30 seconds.

Grind size: Coarse  
Coffee: 30 grams
Water: 500 ml
Total brewing time: 8:00 minutes

Brewing instructions

Step 1– Preparation
Place the French Press on a scale and tare.
Add 30 grams of coarsely ground coffee. 

Step 2– Brewing
Pour water until it reaches 500 grams.
Stir briefly so that all the coffee is saturated.

Step 3– Extraction
Let steep for 8 minutes. 

Step 4– Serving
Slowly press the plunger down and serve immediately.
