When the espresso comes out of the spout between four and eight seconds, a dark brown crema is produced. If the spout starts within three seconds, you have not put enough ground coffee in the filter holder. As a result, your espresso does not have enough time to extract all the flavors from the ground coffee and is very watery. If only drops come out of the spout or no coffee comes out within ten seconds, you have dosed too much coffee in the filter holder. This will result in over-extraction.
